The Duchess Cocktail: Add a bit of refinement to your weekend plans with today’s recipe. (#ad) A regal twist on the classic Bee’s Knees cocktail, this libation is sure to secure a crown on your fabulous head. Featuring homemade Earl Grey tea syrup, elderflower liqueur, and fresh lemon juice, the true star of the drink is Empress 1908 Gin. Micro-distilled in small batch copper-pot stills, @Empress1908Gin is made using eight botanicals: juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms, and the Fairmont Empress Blend Tea. In particular, the coloring of Empress 1908 is what takes this concoction from commoner to royalty. The butterfly pea blossom not only imparts subtle earthy notes to the flavor, its an all-natural indigo hue with a stunning secret to reveal. When you add citrus or tonic (like in today’s recipe), Empress 1908 transforms from vivid indigo blue to a delicate soft pink. Nice parlor trick to have up your mixology sleeve, if you ask me! The Duchess

INGREDIENTS:
2 oz. Empress 1908 Gin
1/2 oz. homemade Earl Grey Syrup (see steps below)
1/2 oz. fresh lemon juice
1/4 oz. elderflower liqueur

DIRECTIONS:
1. To make the Earl Grey Syrup: add 1 cup sugar, 1 cup water, and two Earl Grey tea bags to a sauce pan. Stir continuously and bring to a boil. Remove the tea bags, pour into a jar, and let cool.
2. Add the syrup, lemon juice, and elderflower liqueur to a coup or fluted glass. Stir with a spoon.
3. Pour the Empress 1908 Gin on top for a gorgeous color transformation. Sip and enjoy!

Jambalaya Envelope Poppers for Mardi Gras! (ad) I don’t know about you, but I am going to be throwing an epic Mardi Gras celebration (at home) for my little family this year. I’m talking jazz music, dance processionals, beads galore, and delicious New Orleans-inspired eats. And this year, I am planning to wow my daughter and husband with an unique take on a NOLA classic… Jambalaya Envelope Poppers. Delicious, fun, and best of all mess-free, these babies can be eaten on the go as we dance around the living room. Featuring @Zatarains Andouille Smoked Sausage, they are packed with southern flavor that shouldn’t be missed…

Jambalaya Envelope Poppers

INGREDIENTS:
1 pack of Zatarain’s Andouille Smoked Sausage (diced)
1 cup of white rice
1 green pepper (diced)
1 red onion (diced)
1 1/2 c. chicken stock
1 c. water
2 tbs. olive oil
1 tbs. tomato paste
2 tsp. smoked paprika
2 tsp. garlic powder
1 tsp. salt
1/2 tsp. cayenne pepper
2 sheets of pre-made puff pastry

DIRECTIONS:
1. Heat oil on large skillet, add red onions & green pepper. Cook until browned.
2. Add chicken stock, water, tomato paste, & rice. Thoroughly mix in smoked paprika, garlic powder, salt, & cayenne pepper.
3. Add Zatarain’s Andouille Smoked Sausage to skillet & bring to boil. Once boiling, lower heat, cover, & simmer 25 minutes.
4. Preheat the oven to 400F & grease muffin tin. Roll out pastry sheets & cut 4”x4” squares. Press into muffin tin cavities with 4 corners resting outside of cavity.
5. Once jambalaya filling is cooked, spoon it into each pastry cavity until packed. Fold over corners on top of one another like an envelope.
6. Place muffin tin in oven & bake approximately 15 minutes. Remove and serve hot. Enjoy!
